Primitivo wine I.G.P. Puglia

In the glass is mantled with a bright and vivid red color, velvety on the palate, perfectly matches succulent dishes. It takes its name from Riccardo Siniscalco, a Norman feudal lord of the castle in the town of Gioia del Colle.

Soil characteristics: limestone typical of the hills of  Murgia
Training system: Espalier
Yields per plant: 1-4 kg approx
Planting year: 1990
Harvest:  first ten days of September
Vinification: at controlled temperature, alcoholic fermentation is followed by full malolactic fermentation, in order to give the wine a velvety touch to the palate and greater stability over time
Ageing: 6 months in steel and at least 10 months in bottle
Annual production: about 130,000 bottles
Serving temperature: 18 ° -20 ° C

Tasting Notes 

Colour: vivid and bright red
Bouquet: intense and persistent, fruity where you recognize the cherry and sour cherry flavours beneath the alcohol
Palate: dry, soft, quite fresh and tannic, fruity, full-bodied and full
Food pairings: bread encrusted Prague ham, meatballs with cream sauce, sausage and potatoes, venison, cold cuts and matured cheeses
Cellaring: properly stored, from 5 to 10 years
