Sparkling rosè I.G.P. Salento

With its bright pink, its fine and persistent perlage, a slightly fruity aroma and flavor, appropriate at any time, perfect as an aperitif, with seafood dishes, excellent at the end of the meal with almond pastries. The name evokes the bubbles paired with cherries, main product of the Turi territory.

Harvest: in the second half of September by hand picking
Vinification: with maceration on the skins for a few hours and a gentle pressing from which you take only the so called flower, used for processing in the press along with Charmat method which – in 20 years of experience – has been refined to make the most of the fruity and full harmonious perfumes
Ageing: in the bottle for at least 3 months
Annual production: about 30,000 bottles

Bouquet: fruity, full, with fragrance of ripe red fruit and wild rose
Palate: delicately fruity, tangy, lingering, harmonious
Food pairings: desirable at any time, elegant as an aperitif, softly suitable to accompany a paella, excellent after-dinner with almond paste pastries
