Wine Negroamaro rosè I.G.P. Salento

It is the wine of one night, which comes out of the vat in the morning and is ready to offer its intense and bright coral pink, its elegant ripe fruit aroma with notes of wild rose, which we also find in its fresh and harmonious taste. The name of this rosè celebrates the Marquise Luisa Casati Stampa, called Corè, one of Gabriele D’Annunzio’s favorite lovers.

Harvest: second half of September with hand picking.
Vinification: it favors the use of the “most noble part or the tear” which is “the must that secretes from freshly picked over ripe grapes.” This was how it was described by Sante Lancerio, bottler of Pope Paul III Farnese in 1549. Since then little has changed, except the technology that permits the temperature-controlled fermentation process with selected yeasts

Bouquet: elegant and brings notes of ripe fruits like cherry, strawberry and raspberry, with notes of wild rose

Food pairings: fried zucchini on a tomato sauce, crostini with sun-dried tomato patè, prawn and asparagus isotto, lentil soup
