Harvest: hand-picked from grapes produced by the company in the first ten days of September
Vinification: in the cellar the grapes are still carefully selected, then pressed, de-stemmed and sent to the winemakers. The alcoholic fermentation on the skins allows the extraction of all the valuable substances contained in them: from fruity to polyphenols to tannins. Each step takes place at a controlled temperature. Once the marc has been separated, the wine goes into steel tanks
Aging: without haste in 50 hl second passage Slavonian oak barrels, for a duration of about 12 months
